Clean Oatmeal Peanut Butter Banana Smoothie
Makes 1 serving.
1 medium banana (frozen or room temp)
1/4 cup rolled oats
1/4 cup nonfat greek vanilla yogurt
2 tbsp PB2
1 cup ice
Pulse oats in blender until they become a powder.
Add rest of ingredients and blend.

*for extra yumminess & only an additional 10 calories, add a Tbsp. of cocoa powder!

They’re back! Zucchini tots have become a staple in my kitchen. They’re so easy and so healthy that I just can’t stop making them. I thought I’d share my latest experiment, since these were the best yet.
Zucchini Tots, Again
3 servings
1 cup grated zucchini
1/4 cup grated mozzarella cheese
1/4 cup plain breadcrumbs
1 small onion, minced
1 large egg
1 teaspoon Italian seasoning
1/2 teaspoon black pepper
Preheat your oven to 400° and grease a mini muffin tin. Combine all your ingredients in a large bowl, making sure to mix very thoroughly. Fill each section of the mini muffin tin to the top, pressing down with a spoon. Bake 16 minutes, then remove by running a rubber spatula around the edge of each tot.
* After using both a regular muffin tin and a mini muffin tin, I’ve found that it really does work better to use the mini muffin tin. If you don’t have one, you can still use a regular muffin tin. Just fill the sections about 1/3 of the way and keep a close eye to make sure they don’t burn.
* The major changes I made were adding more onion, more Italian seasoning, and more black pepper, and using mozzarella cheese instead of cheddar. Now I want to make these even more often, because this version was even better than the last one.

I started following the Blogilates 90 day challenge just over 3 weeks ago. I have lost 16 pounds and 4 inches on my waist.
I am following the meal plan provided with the challenge. I’m doing clean eating (nothing processed) but I HAVE to have my coffee/splenda/splash of half & half in the morning. Other than the coffee, I am following it pretty closely. I’ve been switching up my proteins in the meals so as not to get bored.
I am doing an hour of cardio 6 days a week and just introduced strength training this week.
So far, I can’t believe my results! I am SO motivated and this actually feels like a lifestyle I can maintain. Can’t wait to FINALLY be healthy!!!
